Favourite Christmas honey-biscuits made of healthy spalt flour.

spelt flour 14 oz (400 g) • unsalted butter 4.5 oz (125 g) • sugar cane 2.75 oz (80 g) • honey 3.5 oz (100 g) • chicken egg 2 pcs • ground cinnamon 0.5 tsp • gingerbread spice mix 1 tsp • bicarbonate 1 tsp
Pour the flour into a bowl, add chopped butter, sugar, fluidy honey, eggs, cinnamom, black pepper and baking soda.
Knead the dough and let it rest in a cold place for 12-24 hours.
Knead the dough on the working board before processing (hardened one is breaking down, by kneading becomes compact). Roll out (according to need on the floured board) into the cca 3 mm thickness and cut smaller honey cakes. With the knife replace it to the baking tray covered with baking paper.
Brush the cut honey cakes with the beaten egg and decorate with the walnuts.
Bake in preheated oven at 355°F (180°C) for 7 minutes.
Honey cakes are soft straight after baking. Store in a closed box in cold place.
