Refreshing butter rings with a strong sour taste.

1. 

all-purpose flour / plain flour 8.75 oz (250 g)  powdered sugar 2 oz (60 g)  unsalted butter 5.25 oz (150 g)  egg yolk 2 pcs  lemon-juice 3 tbsp

Put the above mentioned ingredients into a deep bowl.

2. 

Knead the dough and put it in the fridge for half an hour.

Roll the dough on a floured board to a thickness of 3 mm. Cut rings out...

4. 

... and place them on a baking sheet lined with baking paper.

5. 

Bake for 10 minutes at 180 °C.

6. 

redcurrant jam

Put two and two wheels with jam together.

7. 

powdered sugar 2.25 oz (65 g)  lemon-juice 1 tbsp

Mix sugar with lemon juice.

8. 

Spray the icing on rings ...

9. 

... and store in the cold.
