Cook potatoes in their skins in water until almost tender. Pour the water out, let the potatoes cool, peel them and cut into rounds.
Put chopped onion in a bowl and add sugar. Pour in boiling water mixed with vinegar to steam the onion.
Add chopped red pepper. Then add prepared mixture from step two, stir well, season with salt and ground black pepper to your taste.
