Wash the flounder and dry it. Check, if the fish has the entrails removed (dark part of the fish).
2. Preparation of vegetables
Heat oil in a pan, add finely chopped leek. Add peeled cucumber cut into small pieces. Season with salt and ground black pepper and pour in some apple cider vinegar. Braise for 15 minutes until tender. Add tomatoes cut into small cubes, stir and set vegetables aside.
Place the fish on a plate, sprinkle with lemon juice and pour vegetables on top.
