Wash the flounder and dry it. Check, if the fish has the entrails removed (dark part of the fish).

2. Preparation of vegetables

english cucumber 0.5 pc  leek 5.25 oz (150 g)  tomatoes 7 oz (200 g)  salt  ground black pepper  olive oil 1.25 tbsp (20 ml)  apple cider vinegar 1.25 tbsp (20 ml)

Heat oil in a pan, add finely chopped leek. Add peeled cucumber cut into small pieces. Season with salt and ground black pepper and pour in some apple cider vinegar. Braise for 15 minutes until tender. Add tomatoes cut into small cubes, stir and set vegetables aside.

3. Roasting of flounder

olive oil 1.25 tbsp (20 ml)  unsalted butter 2 tbsp  seasoning for fish

Season flounder with salt and place it in hot oil with butter. In case the whole fish does not fit into the pan, remove its head. Roast 5 minutes on each side. Season with fish seasoning.

4. Serving

lemon-juice

Place the fish on a plate, sprinkle with lemon juice and pour vegetables on top.
