Rinse flounder. Remove all the entrails and cut off the fins. Leave only part of the tail fin. Score skin in several places to prevent fish from curling during baking.
Cut leek into rounds. Grease baking pot with oil and spread the leek in.
Season the flounder with salt and ground black pepper on both sides. Place it in the baking pot and cover with aluminium foil. Bake for 25 minutes at 355°F (180°C). Serve the fish with herb butter and braised broccoli.
