Recipe

1. Preparation of rice pudding

semi skimmed milk 1,5% 1.05 quart (1000 ml)  water 2.1 cup (500 ml)  rice 12.25 oz (350 g)  vanilla sugar 0.75 oz (20 g)

Cook rice in milk mixed with water and vanilla sugar until soft. Stir frequently while cooking, to prevent rice from burning. Allow the cooked rice to cool.

2. Preparation of rice mixture

unsalted butter 3.5 oz (100 g)  powdered sugar 5.25 oz (150 g)  egg yolk 4 pcs  raisins 2.75 oz (80 g)  egg white 4 pcs

Beat butter with sugar, stir egg yolks in. Add cold rice pudding and raisins dipped in water for a while. Stir everything together well. Whisk egg whites and a pinch of powdered sugar until stiff peaks form, and gently mix it into the rice mixture.

3. Baking

kiwi 6 pcs  unsalted butter  oat flakes

Grease baking tin with butter and pour oat flakes in. Evenly spread half of the mixture. Peel kiwifruit, slice it and lay it on top of the rice mixture. Use kiwifruit which is not too mellow.

4. 

Spread second half of the rice mixture on kiwifruit. Bake in the oven covered at medium heat 40 minutes. Then uncover and bake for 10 more minutes. When finished, sprinkle the pudding with sugar.
