egg yolk 4 ks  sugar granulated 3.5 oz (100 g)  vanilla sugar 0.25 oz (8 g)  water 4 PL

Beat the egg yolks with water, add sugar and vanilla sugar. Blend it.

2. 

flour medium 2.75 oz (80 g)  cocoa powder 4 PL  corn starch 1 PL

In a bowl mix together flour with cocoa and with starch flour. Incorporate the powdery mixture into the egg yolk cream.

egg white 4 ks

Whisk the egg whites until stiff and stir in the batter. Blend all together and pour into the tray covered with baking paper.

4. 

powdered sugar

Bake the base at 355°F (180°C) for 10 minutes. Turn carefully out the baked base on the kitchen towel dusted with sugar.

cinnamon sugar 0.75 oz (20 g)  sugar granulated 1 oz (30 g)  rum 3 PL  cream curd cheese 7 oz (200 g)  whipping cream (30-33% fat) 250 ml  cream stabilizer 0.25 oz (10 g)

Prepare the cream by mixing cinnamon sugar with sugar, rum, cream cheese and whipped cream. During whisking of the double cream add in the cream fix.

6. 

Spread the cream over the base and then flip it in a half at each other.
