1. Cooking broccoli

broccoli 1.1 lb (500 g)  salt

Chop broccoli into florets and steam it until tender. Lightly season with salt.

2. Preparing the roux and béchamel

all-purpose flour / plain flour 1 tbsp  unsalted butter 0.75 oz (20 g)  semi skimmed milk 1,5% 1.1 cup (250 ml)  ground white pepper

Prepare a light roux by adding flour to the heated butter. Gradually pour cold milk and cook thick bechamel. Season with ground white pepper. Leave to cool. 2. Put the mixture into a greased baking dish.

Bake in a hot oven for 25 min. at 355°F (180°C) until golden.
