pork loin  salt  flour fine  chicken egg  breadcrumbs  cooking oil

Wash the pork carre, dry it and cut into slices - cutlets. Pound each cutlet thin on a wooden board. Season them with salt, coat in fine flour, beaten egg and breadcrumbs. Fry in hot oil covered in the frying pan for 10 minutes. Then turn the cutlets and fry them on the other side uncovered for 8 - 10 minutes. Monitor the temperature of oil, if it is too high the cutlets will burn.

Served with potato salad.
