Recipe

1. 

pork loin 2.2 lb (1000 g)

Wash the pork loin and dry it. Use a knife with long narrow blade and cut the holes on each side of the meat.

2. 

dried plums 3.5 oz (100 g)  garlic 6 cloves  salt  ground red paprika

Press the plums into the holes. Season the meat with enough salt, brush it with ground red pepper and pressed garlic.

3. 

bacon strips

Cover the whole meat with slices of bacon and tie it with sewing thread.

4. 

Place the meat in the baking tin, pour water in, cover it with aluminium foil and bake in the oven at 355°F (180°C) from 60 to 90 minutes. Uncover the meat and bake for 10 more minutes.

5. 

Once the bacon on the surface is crispy, take the meat out, remove sewing threads, slice and serve immediately.
