Red Cabbage with Orange


Braised red cabbage with fresh orange juice has a delicate citrus flavour.

red cabbage 2.6 lb (1200 g)  onion 7 oz (200 g)  olive oil 30 ml  sugar granulated 1.75 oz (50 g)  bay leaf 2 pcs

Rinse one head of cabbage under water, drain it, cut into halves and slice. Cut the cabbage leaves away from the stem while turning it, so that we do not have long strips, do not cut the stem. Peel onion, chop it finely and cook in hot oil in a deep pot. Pour in sugar and when it becomes melted add bay leaf. Caramelize sugar a little ...

... pour in sliced cabbage, season with salt and add crushed cumin. Stir and braise covered for 10 minutes while stirring occasionally.


orange juice 300 ml

Pour in orange juice and again braise until cabbage becomes soft.


potatoes 3.5 oz (100 g)  vinegar  salt  sugar granulated

At the end thicken the cabbage with peeled, finely grated potato and add vinegar to your taste (more or less depends on orange, if it is was more sour or less). We can add salt and sugar if required.
