red cabbage 1.8 lb (800 g)
Wash the cabbage, cut it into smaller pieces ..
... and grate coarsely in a food processor.
Salt the cabbage, stir and let it rest for half an hour. Then squeeze the juice out of it and strain it.
carrots 10.5 oz (300 g)
Clean the carrots, wash and grate it.
celery 7 oz (200 g)
Clean and wash the celery. Grate it like the carrot.
onion 2.75 oz (80 g)
Add carrot, celery and cleaned, finely chopped onion to the cabbage.
Add vinegar, sugar and pepper to the salad.
Mix well and let stand in the cold for 2-3 hours.
