Recipe

1. Leaven

semi skimmed milk 1,5% 1.1 cup (250 ml)  fresh yeast 1.5 oz (42 g)  sugar granulated 2 oz (55 g)

Stir 1 tablespoon of sugar, fresh yeast into 100 ml of warmish milk and prepare leaven.

2. Dough preparation

all-purpose flour / plain flour 1.1 lb (500 g)  unsalted butter 5.25 oz (150 g)  egg yolk 2 pcs  lemon peel 1 tsp  salt  vanilla sugar 0.75 oz (20 g)

To make a dough, mix flour, butter, lemon zest, vanilla sugar, remaining milk and granulated sugar. Add egg yolks and a pinch of salt.

3. 

Mix it well and knead the dough. Let it rise at the warm place for about 30 minutes.

4. Creating Judas

Split the dough into 10 pieces, shape the roll from each one and form braid, spiral or knot.

5. Baking

Line baking tin with parchment paper, place Judas on. Brush them with beaten egg. Sprinkle some of them with poppy seed. Bake at 355°F (180°C) for about 20 minutes.
