Trdelnicky (Slovak sweet pastry)

    

Tasty mini trdelnik inspired by traditional favorite Skalica trdelnik.

all-purpose flour / plain flour 1.7 lb (750 g)  egg yolk 3 pcs  unsalted butter 6.25 oz (180 g)  baking powder for gingerbread 0.25 oz (10 g)  semi skimmed milk 1,5% 10 tbsp (150 ml)  whipping cream (30-33% fat) 10 tbsp (150 ml)  powdered sugar 0.75 oz (20 g)

Pour flour in a bowl, add egg yolks, softened butter, baking powder, milk, whipping cream and sugar.

Knead the dough well and let it rest for a while.

Use a rolling pin to spread part of the dough (about 1/3) on the floured board until it is about 2 mm thin and cut it into strips 40 cm long and 3 cm wide. Brush the metal logs with butter...

... and wrap the dough around.

Lay trdelnicek on the baking tin lined with parchment paper and brush with beaten egg white.

6. Cinnamon trdelnicek

Roll the side of trdelniceks brushed with egg white in cinnamon sugar and place them back on the baking tin.

Bake trdelnicek at 355°F (180°C) for 20 minutes.

Once they are cool remove them from log and process the next part of dough.

9. Walnut trdelnicek

Repeat the procedure of spreading and wrapping with the other part of the dough. Dip the side of trdelniceks brushed with egg white in ground walnuts mixed with sugar. Bake the same way as the cinnamon ones.

10. Cocoa trdelnicek

Once they are baked, again wait until they become cool and remove trdelniceks from the log. Process and bake the last part of dough. You can coat trdelniceks in sugar mixed with cocoa powder.
