Lokshe (Potato Tortillas)

     

Recipe for tasty and easy lokshe.

1. Cook potatoes

potatoes 1.8 lb (800 g)  salt 1 tsp

Wash potatoes in their skins under running water to remove possible clay. Put the washed potatoes in the pot. Pour water in so that all potatoes are covered with water. Season with salt. Cook potatoes in their skins until almost tender.

2. Mix potatoes

Pour the water out, allow potatoes to cool, peel them and put in the mixer.

3. Work the dough

flour medium 5.25 oz (150 g)  salt 1 tsp

Mix the mixed potatoes with flour, season them with salt and use your hands to work the dough.

4. Spreading into the thin pancake

Form the dough into equal balls and use a rolling pin to spread them into thin pancakes.

5. Cooking

Cook the pancakes on ungreased non-stick pan on both sides.

6. Serving

Brush the finished lokshe with lard (goose fat is the best), just with melted butter or olive oil.
