quinoa 7 oz (200 g)
Rinse the quinoa under the running water through the sieve and let it drain.
Pour the quinoa into the boiling salty water and simmer over the medium heat under the lid for 15 minutes. Remove from the fire and let it finish in covered saucepan for 10 minutes.
Uncover, blend and let it cool.

Wash the lamb's lettuce under the running water through the sieve.
Peel the onion and cut into the thin half moons. Wash the tomato and cucumber, cut into the cubes.
In a bowl separate onion and blend with oil and lemon juice.
Add prepared vegetable, gently tear lamb's lettuce and blend it.
Blend the quinoa into the vegetable. Serve with the olives.

For non-vegans the salad can be served as a healthy side dish for the meat.
