Mix eggs, granulated and vanilla sugar, add flour, crumbled cream cheese, grated lemon zest and raisins. Stir everything well and work the dough.
With wet hands take a small amount of dough to form croquettes, and coat them in bread crumbs.
Heat oil in a deep pan and fry the croquettes from all sides until golden brown.
Transfer the fried croquettes to paper towels to drain.
Serve croquettes with whipped cream and blueberry compote or some other fruit.
