Rinse sauerkraut under cold water and spread it evenly on the bottom of the baking tin.
Wash the chicken thighs, season them with salt, sprinkle with ground red pepper and place them on top of the prepared sauerkraut. Sprinkle them with soy sauce. Cover the baking tin and bake them in the oven at medium heat 40 minutes. Uncover the tin and bake thighs until the skin is crispy, for about 20 minutes at high heat.
