powdered sugar12.25oz350grams

sugar flakes-
unsalted butter3.5oz100grams

 

Recipe

1. 

all-purpose flour / plain flour 7.5 oz (210 g)  powdered sugar 1 oz (30 g)  unsalted butter 3.5 oz (100 g)  egg yolk 2 pcs

Put the above mentioned ingredients into a deep bowl.

Divide the dough into 20 equal pieces and press into it into molds.

Bake for 16 minutes at 180 °C.

Gently tip the cooled biscuits out of the molds.

Beat the egg whites until they are foamy.

Add sugar.

Continue to whip the egg whites in a hot steam bath. By the temperature 320°F (160°C) F (160°F (70°C) C) or more warm up during whipping for 5-10 minutes.

Fill the warm egg whites filling into a pastry bag with a wide tip.
