Recipe

1. 

unsalted butter 3.5 oz (100 g)  powdered sugar 3.5 oz (100 g)

Beat room-temperatured butter with sugar until creamy.

potato starch 4.25 oz (120 g)  all-purpose flour / plain flour 5.75 oz (160 g)  salt 1 pinch

... potato starch (you can also use corn starch), flour and a pinch of salt.

Knead the dough.

Roll the dough on a floured board to a thickness of about 3 mm. Cut small rectangles with a decorative mold, or you can cut the dough to the required size.

Put the cutted rectangles on a baking sheet lined with baking paper. Press each rectangle on one side with a fork.

Bake for 8 minutes at 180 °C.

Sprad half of the baked biscuits with jam ...

... and glue with the other half together.

Heat the cream in a water bath and melt the chocolate in it.
