Apple sponge cremes

1. Preparation of apples

apples 3.3 lb (1500 g)

Peel the apples and grate them coarsely.

sugar granulated 3.5 oz (100 g)  ground cinnamon 1 tsp

Pour sugar, cinnamon over the apples and mix.

3. Preparation of pudding

semi skimmed milk 1,5% 1.05 quart (1000 ml)  vanilla sugar 0.75 oz (20 g)  vanilla pudding - powder 4 oz (111 g)

Mix in the cold milk pudding with vanilla sugar, bring to boil and cook until it becomes dense.

4. Dough

puff pastry 14 oz (400 g)  ladyfingers 11.25 oz (320 g)  apple juice 3.25 tbsp (50 ml)

Split puff pastry into halves. Use a rolling pin to spread one half and place it into baking tin. Lay one half of sponge biscuits on the pastry close to each other. Sprinkle them gently with juice from apples but we can also use apple juice.



Spread layer of pudding over the sponge biscuits.

Spread grated apples over the pudding and once more lay sponge biscuits. Again sprinkle with fruit juice.


Use a rolling pin to spread the second half of pastry, place it on the sponge biscuits, gently press with your hands and prick with fork. Bake in preheated oven at 355°F (180°C) for 25 minutes. Sprinkle the finished cake with sugar.
