Quick curds pie from foliated dough


Recipe for delicious curd pie with apples and raisins. You do not have to combine curd with mascarpone, you can use a double dose of curd.

1. Preparation for the dough

puff pastry 1.1 lb (500 g)

We spread the foliated dough on the floured plate about the size of the pan.

By roller we transfer the dough on the pan, which we flush with water before.

3. Preparation for the curds fill

curd 8.75 oz (250 g)  mascarpone 8.75 oz (250 g)  vanilla sugar 0.75 oz (20 g)  powdered sugar 8 PL  vanilla pudding - powder 0.75 oz (20 g)  semi skimmed milk 1,5% 0.5 l  raisins 2.5 oz (70 g)

In a bowl we scramble curd, mascarpone, sugar, vanilla pudding (golden ear, raisins, milk. Mixture will be a little bit less dense, but at the baking it will solidify.

We evenly bray the curd fill on the all the surface of the dough.


unsalted butter 0.75 oz (20 g)

On the surface we evently grated the butter.

6. Apple cover

grated apples 10.5 oz (300 g)  ground cinnamon

We stratify the grated apples on the curd fill, sprinkle them with cinnamon.

We bake it at 355°F (180°C) about 20 minutes.


Finished pie we let become cool, cut in the cubes and we serve it.
