Recipe

1. Cooking of broccoli

broccoli  water 2.1 quart (2000 ml)  salt 1 tsp  ground nutmeg 0.25 tsp

Cut the broccoli into florets, wash and cook in salted water until soft. Mix it with an immersion blender and add a pinch of nutmeg.

2. Celery dumplings

Take the leaves from the celery top and chop them finely .

egg yolk 2 pcs  unsalted butter 1 oz (25 g)  semolina 3.5 oz (100 g)  salt 0.25 tsp  water 1 tbsp  celery leaves 3 tbsp  egg white 2 pcs

Mix the yolks with butter, add semolina, a little salt, a spoon of water, finely chopped celery top and egg whites snow. Mix the dough and let it rest for a while.

Rub the dumplings into the soup, overcook.
