Mango Salad with Papaya and Fresh Herbs

Both the mango and papaya should be firm and only slightly ripe. Fruit that is too soft will fall apart when grated, release too much juice, and cause the salad to lose its fresh, crunchy texture.

Tip: Toss the salad with the dressing shortly before serving. This will help the fruit and carrots stay firm and prevent the salad from becoming too watery.
Tip: For extra flavour and crunch, sprinkle the finished salad with roasted peanuts, crispy fried onions, or sesame seeds.

Recipe
1. Prepare the Fruit and Vegetables
Papaya 1 pc • mango 1 pc • carrots 2 pcs
Peel the papaya and mango. Remove the seeds from the papaya and the stone from the mango. Peel two carrots as well.

2. Grate Everything
Finely grate the papaya, mango, and carrots, or cut them into very thin strips. Place everything in a large bowl.

3. Prepare the Dressing
lime 1 pc • soy sauce 1 tbsp • fish sauce 1 tbsp • sesame oil 1 tbsp • chilli flakes 1 pinch • salt 1 pinch • sugar cane 1 tsp
In a small bowl, combine fresh lime juice, light soy sauce, fish sauce, and sesame oil. Add finely chopped chilli, a pinch of salt, and a little brown cane sugar. Stir until the sugar has dissolved.

4. Dress the Salad
Pour the prepared dressing over the grated fruit and carrots. Mix thoroughly so that all the ingredients are evenly coated.

5. Add the Herbs
coriander 1 handful • mint 1 handful
Wash and dry the mint and coriander leaves, then roughly chop or tear them.

6. Finish the Salad
Add the herbs to the salad and toss everything together gently. Sprinkle with roasted peanuts, crispy fried onions, or sesame seeds and serve immediately.
